Chicken Crossing the Road

Happy Chicken Tuesday!

Today I'm sharing my wonderful homemade Chicken Noodle soup recipe!

Ingredients:
1 whole chicken
6 medium carrots washed, peeled and sliced
6 ribs of celery washed -Dice three of them thinly
and leave three whole
salt-to taste
pepper to taste
1 Tbsp. poultry seasoning
Swanson broth 16 oz.
rosemary 3 sprigs
sage two sprigs
cheese cloth and kitchen twine small piece
2 bay leaves
1 tablespoon garlic finely minced
1 medium onion finely chopped
16 oz pack of No Yolks Med.Sized Egg noodles

Directions:

Wash chicken and remove innards
place in large cooking pot with salt and pepper and poultry seasoning

Make a Bouquet Garni for the herbs by placing them on the cheese cloth scrap and tying them up in there snugly. Toss the Bouquet Garni in the pot with the boiling chicken. If the Bay leaves will not fit don't worry about it. Just toss them in the pot separate.
Garlic, Onion, carrots, celery, and ALL ingredients except noodles and reserve 2/3 of the Swanson broth for later.
Bring to a full boil then turn heat down to Med. High and cook for several hours
until the chicken is falling off the bone.

Take chicken out of the pot and allow to cool slightly.
Pick good white meat off the bone cube and add back to broth.
Toss out three whole ribs of celery from broth.
Discard bay leaves and bouquet garni
Add noodles
Add remaining Swanson broth

Boil until noodles are soft and tender, but not overcooked. About 7 minutes at a rolling boil.

Cooking the chicken slowly and using an entire hen makes a rich, flavorful broth.
The herbs, veggies, and chicken fat are just the thing for cold weather and promote good health.

Aunt Clucky's Nest and Sophie sitting atop the coop

Aunt Clucky herself! My Mom, Dad and Kids fixed this crazy thing up for me one year for my birthday! She lives in my kitchen! The eggs in her nest were made for me one year by my Mother for Easter. They are ceramic!

Hi Sea! Thanks. I like to use my herbs from my kitchen garden in whatever I can. Sick as I've been lately I'm trying to stoke my immune system up with as many good things as I can. I am starting to clear up!
Hallelujah! thank you Lord! Glad you liked the Aunt Clucky picture. She looks crazy! LMAO
Kinda like me!

Did you see my herb thursday blog last week? It has herbal soups to boost your immunity and other things.

Hi Seanymph! Yes, I did see that. I was thinking of trying some of those recipes. Especially now!

Also I think I said on another blog of yours.............burdock for cleansing the blood and liver. I take a tinture of it once or twice a week. Just an eyedropper half full in some water. I take alot of allergy meds too.

Sea, I appreciate your being so willing to share all your great ideas! I have decided that for now I will take my Liver DeTox stuff and my alfalfa pills, but I'm not going to get too serious about detoxing right now for two reasons 1. I just had a 3 week break from all meds and pharmaceuticals and 2. It doesn't make alot of sense to worry about detoxifying so much when I am now on the 100% aggressive medication regimen. I will plan a more committed, logical detox period to coordinate with my next medication break. This will likely be during June. During Summer my allergies calm down. I can take 7-10 days of a break and a liver cleanse. Meanwhile I will concentrate on getting healthier and boosting my immune system!

Thank you for the recipe. I can't wait to try it as it has other ingredients than mine. I love to cook and learn new recipes. Heck, on a cold winter's day or quiet day...I sit around all day and read my collection of Southern Living Cook Books, old family recipes, and new things. I grow most of those herbs, too. I see those "several sprigs" of herbs in my grocery store priced about $3.69 and tell hubby..."dang, we must has $3,000.00 worth of that herb growing in our yard. Anywho...I strongly believe in the power of Chicken soup's healing powers. Rest is good, too. Love the cat pic and all the rest. I am addicted to "Chicken Tuesday"...it is the most fun thing to look foreward to. Nitey Nite, dear!

Glad you liked the recipe and photos, Rosie! Herb gardening is very soulful as well as practical. I don't care for the grocery store prices on herbs either! I like Chicken Tuesday! It is fun and gets my thinking going in some neat directions. Good Night!
